If you’re looking for organic coffee beans in Australia, you’re in the right place.

We’ve been sourcing and roasting coffee in Melbourne since 1989. Over that time, we’ve learned that good coffee starts long before it reaches the roaster. It begins on the farm, in the soil, and in the decisions growers make each season.


Why organic farming changes the coffee

Organic coffee farming is not the easy option.

It avoids synthetic fertilisers and pesticides, relying instead on healthy soil, shade trees, and natural cycles. That takes more care, more labour, and often results in lower yields, but it builds stronger farms over time.

Studies from organisations like the FAO and World Coffee Research show that these systems can improve soil health, support biodiversity, and help farms better cope with changing climate conditions.

It also shapes the coffee itself.

Cherries tend to ripen more slowly, developing density and a steadier sweetness. That structure carries through into the cup.


Where this way of thinking comes from

Before coffee, Wells Trenfield was working a small biodynamic farm in Australia.

That experience stayed with him. Farming was not something to rush or push. It was something to observe, adjust, and work with over time.

When Jasper Coffee began, that thinking carried through.

We have worked with organic and Fairtrade co-operatives for decades. These are long-term relationships, built slowly, that allow growers to plan ahead and continue improving quality year after year.


Roasted here in Melbourne, every day

All of our coffee is roasted in Melbourne.

This is where everything comes together. The work done on the farm, the way the coffee is processed, the way it is stored and handled.

Our role is to bring that forward without losing it.

We roast in small batches, taste every coffee, and adjust carefully. Over time, that repetition builds consistency. It’s how we’ve maintained quality for more than 25 years.


Coffee that holds up in the cup

Organic coffee still has to taste right.

We look for balance, structure and clarity. Something that works as an espresso, but also sits comfortably with milk.
