Gelgelu Edemi is a single producer farmer exporting his family coffee since 2013. Located in the Chelechele locality within the Gedeb – Gedeo Zone
Farming on just 22 hectares Gelgelu employs his family as labour during the season to take care of the coffee processing and drying. Other employees are hired during the harvest which takes place from November to February.
Once picked, the coffee is first filtered based on the density of the cherry.
A floating tank is used to separate the good cherries from the under-ripe or overripe fruit. When this step is completed the best quality cherries are taken to raised beds where they are carefully dried for about 17 days.
In order to maintain consistent drying practices and to avoid potential damage to the quality of the bean, the cherries are spread on the bed in a thin layer. This helps speed up the drying process and also maintains the uniformity of the coffee.
