Who is Jasper Coffee?
Way back in 1989, Merilyn and Wells were artists living a life of exploration and adventure. The kind of life that involved paint on their hands and maps on the passenger seat.
Artists, travellers, curious about the world. Eventually they pulled the kombi over in Melbourne and decided to build something of their own.
They opened a small shop in Collingwood and named it after their son, Jasper. It was modest, but it quickly became a place people gravitated towards.
Why?
At the time (and you may not believe this), coffee was not very good in Melbourne. They became obsessed with finding interesting and unique single origins, often organic and hard to come by. Each week looking over the fine detail of roast profiles and brewing methods, learning as much as they could at a time when information was hard to come by.
Quickly it caught on. They knew there was more to this whole thing than just the sharp bitter cup of coffee that seemed to be the norm.
People could taste the difference.
As the coffee evolved, so did their thinking. It was never only about what ended up in the cup.
They began forming long term partnerships with growers across Africa, Central and South America and the Pacific, relationships built on trust and consistency rather than short term wins. That stability helped producers plan for the future, invest in their land and communities, and improve quality year on year.
Over time, Jasper helped shift expectations in Australian coffee, not just around flavour, but around responsibility. Always searching for better taste. Always looking for better ways to trade. Still making coffee that feels generous, and building something designed to last.
