About Mexico Chiapas

With aromas of cinnamon and toast, a sweet body of rich brown sugar and a malty finish, this Mexican Single Origin is hard to surpass.

Varietal: Typica, Bourbon, Mundo Novo, Caturra
Process: Washed

Origin story

Deep in Mexico's El Triunfo Biosphere Reserve, where jaguars roam and spider monkeys swing through the canopy, you will find some remarkable people and coffee trees.
This coffee grows under native forest shade in one of the Americas' most vital wildlife corridors.

In 2001, Professor Cruz José Arguello Miceli helped create Unión Ramal Santa Cruz, bringing together smallholder farmers in Chiapas to escape exploitative middlemen. Twenty-five years later, this cooperative thrives through collective decision-making and shared commitment.

Their farms sit between 1,000 and 1,800 metres above sea level, where Typica, Bourbon, Caturra, and Mundo Novo varieties grow slowly. From December to March, farmers handpick the ripest cherries, then wash and sun-dry them with meticulous care.

The result? Warm cinnamon spice opens each sip, flowing into rich brown sugar sweetness with distinctive malty depth that lingers beautifully. It's comfort in a cup with complexity that keeps you coming back.

By growing coffee under native canopy, these farmers protect endangered species whilst creating income for their families. Every bag preserves migratory bird habitat and maintains biodiversity that took millennia to develop.

In our quest to find the most stunning Fairtrade coffees from around the world we were lured to the region of Chiapas renowned for political uprising and visionaries. This coffee is as fascinating as the region it comes from, with punch and complexity it reflects its origin with bold flavours that excite the palate.

    Mexico Chiapas = Morning Yum!

I bought this coffee for the first time, thinking 'the description sounds nice', I wonder what the coffee tastes like? I have have my coffee black with no sugar and I chose this coffee because of the tasting notes included brown sugar. There do not seem to be many coffees that you can have without something to sweeten the deal, I'm happy to say this is one of them. Woken up groggy? Then 'do yourself a flavour favour' (paraphrasing Molly) and treat yourself to a cup of this coffee.
