It grew slowly. Through migration, through habit, through people who cared deeply about how things were made. Greek and Italian communities brought espresso culture with them in the mid twentieth century. Small cafés began to appear. Coffee became part of daily life, not a luxury, but a ritual.

By the late 1980s, that culture was still finding its footing.

In 1989, Jasper Coffee opened its doors in Collingwood. At the time, the idea of sourcing distinctive coffees and roasting them with care was far from common. Information was limited. Travel was essential. Curiosity did most of the work.

Melbourne was the right place for it.

Jasper Coffee has been part of that shift from the beginning.

Founded by Merilyn Parker and Wells Trenfield, the business grew out of a mix of art, travel and curiosity. Wells approached coffee the same way he approached painting. Observing closely. Adjusting constantly. Looking for something deeper.

That mindset carried through into the way we source and roast coffee today.

We have worked with many of our grower partners for decades. Returning to the same communities year after year. Building relationships that allow for consistency, trust and gradual improvement over time.

It is slower. But it leads to better coffee.

Roasting coffee is not about forcing a result.

It is about understanding what is already there.

Each coffee is shaped by its environment. Altitude, soil, rainfall, the way it is processed after harvest. Our role is to bring that character forward without losing it.

That takes repetition.
