The elements of uncertainty in the progress and vision of disabled youth seem fragile and aimless like suspended dust particles themselves..Through the work of the Heelers and their mentor Tom Powell, dust particles are settled and reconnected substantially to earth, families and community.

Certified Jamaican Blue Mountain – St Clouds Estate

This year our Jamaica Blue Mountain beans come from St Clouds, which is part of the Mavis Bank group of producers/processors.

All JBM grows on very small plots which are on very steep high mountain slopes and difficult to harvest in the clouded mists at approx. 2,200mt. The trees produce cherry only after 10 months from flowering. Normal coffee takes around 5-6 months from flowering to develop.

We have not had this particular coffee before, and that requires new adjustments in the roast profile….SCARY STUFF!

So congratulations to our Roasting Team Tong, Charles, Jeremy and Sean, who have sweated over getting the nuances just right for the cup.

Cuba Calling

And so to coffee; Habana.
Whenever you hit a place you have to dive right in.

First dive was dark, dark and dark, pre ground, scooped,with an approximate- only dose, no group ever seems to have been cleaned(at least since 1963) and pungent black like soot from the fire that went out many years ago. Had far worse in Italy! But necessary to start the hunt.

In every café the standard bag of coffee is pre ground with no variation of type or roast and certainly no one could afford a grinder for beans.
